Coconut Matcha Bar
These Coconut Matcha Bars are chewy, subtly sweet, and packed with the earthy flavor of Bree Everyday Matcha. Perfect as a healthy snack, dessert, or energy boost, and entirely egg-free.
Ingredients (12 bars)
π 1 cup shredded unsweetened coconut
π Β½ cup all-purpose flour
π 2 tbsp Bree Everyday Matcha (sifted)
π Β½ cup coconut sugar or brown sugar
π Β½ cup coconut oil (melted)
π ΒΌ cup maple syrup or honey
π Β½ tsp vanilla extract
π Pinch of salt
π Optional: ΒΌ cup white chocolate chips or chopped nuts
Instructions
π Preheat the oven to 175Β°C (350Β°F). Line a 8Γ8 inch baking pan with parchment paper.
π In a bowl, mix shredded coconut, flour, Everyday Matcha, sugar, and salt.
π Add melted coconut oil, maple syrup, and vanilla extract. Stir until well combined.
π Fold in white chocolate chips or nuts if using.
π Press the mixture evenly into the prepared baking pan.
π Bake for 18β22 minutes until the edges are lightly golden.
π Cool completely, then cut into bars.
